Yeah, I know Shrove Tuesday was 2 days ago but who cares Pancake Day could be everyday and no one would complain :-) Today I want to share this super easy recipe with you so you can have pancakes again this weekend. Santi and I sometimes think we're master chefs so we came up with this Vegan Banana Pancakes... we actually first went on Google, cause he knows everything, looking for some recipes and ended up just versioning some of them as we were totally improvising that day and didn't have all the ingredients. But we finally managed to cook these guys by stealing some of the ingredients from our flatmate's cupboard... so yeah keep reading for full list of ingredients needed and some cooking instructions!

140 gr whole wheat flour
2 tsp baking powder
300 ml unsweetened soy milk
1 banana (ideally two)
1/2 tsp vanilla extract stolen from your flatmate's cupboard (thanks Yan)

Secondary ingredients needed (which won't be added to the pancake mix) would be some vegetable butter to spread on the pan and whatever toppings you'd like, we used almond yogurt, syrup and cinnamon.

Well first mix all the ingredients as they are except for the banana which you'd mash first, you should get a batter that's not liquid but not solid either, even tho it should be more liquid than solid, if that makes sense. Then it is as easy as spreading some butter in a frying pan, bring it to medium heat and then pour some of the batter in trying to get a perfect circle shape. Of course all pancakes are beautiful no matter their shape so don't worry too much about it. The quantity of batter you're pouring depends on how big is your pan and / or how big you want your pancakes to be. The following depends on the hobs you're using but you should turn the pancake upside down after a couple minutes of cooking and wait one or two more minutes for the other side to cook; again, check regularly as your cooking time might slightly vary. As soon as it starts getting tan you can remove it and go for the next one. Just remember to spread a bit more butter before pouring some batter again. As a final touch we decided to top them up with almond yogurt, syrup and cinnamon, but of course you can just have them with whatever you fancy!

We managed to get like 4 or 5 pancakes each, they where quite small in size but that was more than enough! So I hope you guys give this a go and enjoy it as much as we did!
